Whole Wheat Angel Food Cake
3/4 c. whole wheat pastry flour
1/4 c. cornstarch
1 1/2 c. sugar (use half Splenda if you wanna)
12 large egg whites, room temp
1/2 tsp. salt
1 1/2 tsp. cream of tartar
2 tsp. vanilla extract
Preheat oven to 325 degrees
Sift or wisk together flour, cornstarch and 3/4 c. sugar. Beat together eggs, salt and cream of tartar until soft peaks form. Beat in remaining sugar, adding gradually. Carefully fold the egg whites into the flour mixture. Pour mixture into angel food cake pan and bake for 1 hour. Enjoy with any type of diced fruit, berries or compote.
